The grapes all come from a single vineyard owened, located in Negrar, in the heart of the Valpolicella Classica, at 190 m. s.l.m.
The harvest usually takes place towards the end of September. The grapes are selected very carefully and placed in wooden trays. After harvesting, the boxes are taken to the loft where a natural drying takes place for 30 days.
Subsequently we proceed with the destemming and crushing of the grapes. The grapes macerate until the start of fermentation triggered by indigenous yeasts, during which daily pumping over and delestage are carried out. After racking, the wine is left to rest for another 15 days in steel, and then moved on to refinement in wood.
Aged 16 months in Slavonian oak barrels. It rests for six months in the bottle before being put on the market.
A bright, vibrant hue ushers in a charming soft, shy nose notes of morello cherry, infused with cinnamon and rose tea, while cedar bark and mosses weave into a noteworthy bouquet. A balanced, full-flavoured palate encores floral notes, adding gentle tannins.
